Domaine Mayrac

Domaine Mayrac is in the mountainous Limoux region at a height of up to 550 metres. It has been organic since 1987. Many biodynamic practices are used, such as the use of sheep manure and application of fermented preparations made from herbs. There is an abundance of worms and insects in the soil. The height of the vineyards gives the wine a refreshing character. The Domaine has a selection of oak barrels, not only from different regions of France, but also America and Hungary. They aim to let their wines take their time - to develop a character which reflects their terroir. Very little sulphur is used,
